- 500g lean pork mince
- 2 tsp olive oil
- 1 onion, quartared and sliced
- 50g pkt Burrito seasoning
- 4-6 floured tortillas
- Shredded iceberg lettuce
- 1 avocado, sliced
- 2 vine-ripe tomatoes, sliced
- 1/2 cup grated cheddar cheese
Heat the oil in a large frying pan over medium heat and cook the onion for 2-3 minutes. Increase heat to high, add mince and cook until lightly golden for approx. 5 minutes. Stir consistantly.
Add the seasoning and water (as per packet directions – note this seasoning is “medium” regarding the heat level, possibly use half for young children) and stir well to combine.
Reduce heat to low and cook for 8 minutes stirring occasionally.
Spoon cooked pork onto one edge to tortilla add lettuce, tomato, avocado and cheese.
